The tahini dressing of whole tahini lifts it deliciously and completes with its "good fats" the trio of macronutrients (fat, carbohydrates, proteins).

Healthy Ingredients
For the Mediterranean Salad
- 300g mixed Legumes «Voion Land Products»
- 20g organic kalamata olives «Aeons»
- 1 onion
- 1 spring onion
- 1 large red pepper
- 200gr cherry tomatoes
- 1 cucumber
- 30g Roasted Unsalted Cashews «Nutorius»
For the Dressing
- 1 tbsp. Greek Thyme Honey «Helmos»
- 3 tbsp. Wholegrain Tahini «The Nutlers»
- ¼ tsb garlic powder
- salt, pepper, greek organic oregano «Olympus»
- 3 tbsp. lemon juice
How to cook Summer Salad with mixed Legumes and Tahini dressing
- Soak the legumes for 12-16 hours.
- Boil the legumes for 40 'in salted water (until beans are soft) and then drain it and transfer it to a bowl.
- Let it cool.
- Finely chop the cherry tomatoes, peppers, onion, spring onion, cucumber and olives and add them to the bowl with the legumes.
- Add the cashews seeds
- In a small bowl make the dressing with tahini, lemon juice, honey, garlic powder, salt, pepper.
- Pour the dressing over the legumes salad.
