How to cook Summer Salad with mixed Legumes and Tahini dressing

  • Soak the legumes for 12-16 hours.
  • Boil the legumes for 40 'in salted water (until beans are soft) and then drain it and transfer it to a bowl.
  • Let it cool.
  • Finely chop the cherry tomatoes, peppers, onion, spring onion, cucumber and olives and add them to the bowl with the legumes.
  • Add the cashews seeds
  • In a small bowl make the dressing with tahini, lemon juice, honey, garlic powder, salt, pepper.
  • Pour the dressing over the legumes salad.
