Roasted Sweet Potatoes with Almond Hummus Recipe

Healthy Ingredients

  • ½ tsb ground ginger

How to cook Roasted Sweet Potatoes and Hazelnut Hummus

  • Soak the chickpeas overnight. The next day boil them for 45 'so that they get soft and then strain them. Keep some water from boiling.
  • Roast for 30-35 mins at 190C until the skin is shrivelled and lightly blistered. When they are still hot seal in a plastic bag and leave to cool. Remove the seeds and peel away the skin.
  • Grind the chickpeas with garlic in the blender and add the peppers, ginger, chili and salt. Then add the hazelnut butter, lime juice and 2 tbsp. from the water we kept and finally, pour 1 tbsp. of virgin olive oil. You can add more water until you have the desired texture.
  • In a small bowl, put 2 tbsp. olive oil, 1 tbsp. paprika, 1 tbsp. oregano, pepper, salt and mix.
  • Boil the sweet potatoes for 15 'together with their skin. When they are ready peel away the skin, place them in a pan lined with oil paste, pour the olive oil and the spicy mixture.
  • Bake at 200 ° C for 35-45 '.
