The Organic Forest Honey by Emmelaki is collected from the forests of Northern Greece. Bees that kept at higher altitudes, will have a much shorter period of time within which to gather nectar and make honey before the seasons change. This makes high-altitude honey rarer due to its smaller supply. Mountain honey also tends to have a slightly thicker consistency due to its low moisture content.

Their honey is collected where the bees should be, in unaltered natural areas. They are located in the northernmost part of the country, in the prefecture of Florina, where “borders are not a punishment but an honor”.
